Hi, I’m Adam Mays.

New York Oyster Week was born from a love of the sea, the city, and the stories food can tell. After years of traveling the world and learning kitchen secrets from chefs, markets, and coastal towns, I kept coming back to one constant: food connects people in a way few other things in life can.

Oysters, especially, carry history, culture, and a sense of place. They remind us of New York’s own roots as one of the great oyster capitals of the world. This site is where I bring together that passion, celebrating the traditions, recipes, and experiences that keep oysters at the heart of good food and good company.

But don’t be fooled. I don’t neglect other foods.

Cooking, for me, is never just about technique, as sharing moments is one of the biggest parts of the whole magic. When I create content here, whether it’s a recipe, a story, or a feature on local producers, I want readers to feel the same excitement I get when I crack open a fresh oyster or discover a new way to prepare a dish.
