Join us for our next Oyster Social presented by William Fèvre at The East Pole on 65th St. and Lexington Ave. on Sunday, September 23, 5:30-7pm. This intimate tasting includes a selection of a half-dozen oysters prepared in a variety of ways by Chef Joe and Chef Jesus. William Fèvre will graciously provide wine pairings to perfectly accompany the oysters.
One of the most renowned wineries in Chablis, William Fèvre produces exceptional Chablis that finely express ideal growing conditions. Millions of years ago, the chalky white limestone of Chablis was the bottom of a shallow sea—rich in oysters and other shellfish—now resulting in this unique soil called Kimmeridgian. This soil is what gives the Chablis grape (Chardonnay) its characteristic minerality and freshness and makes it the best pairing for seafood and oysters in particular.
Dotted through the tasting will be discussions on the oyster pairings, oyster's role in the ecology and history of New York, and an overview of the Billion Oyster Project and how to get involved.
The East Pole is a valued restaurant partner of the Billion Oyster Project Shell Collection Program. The East Pole donates its shells to support BOP's mission to restore a oyster reefs to New York Harbor. The recycled oyster shells from the social will act as a growing substrate for thousands of baby oysters.
